These Jerk Cauliflower Tacos are a perfect example of a quick and easy weeknight meal. The cauliflower florets are roasted to perfection and tossed in a tangy, spicy jerk marinade. The crisp cabbage slaw adds a refreshing crunch, while the warm tortillas provide the perfect vessel for all the flavors.

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1/4 cup Backriver Blends Original Jerk Marinade
  • 8 corn tortillas
  • 1/2 head green cabbage, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

  1. Prep the cauliflower: Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil and jerk marinade, ensuring they are evenly coated.
  2. Roast the cauliflower: Spread cauliflower florets on a baking sheet and roast for 20-25 minutes, or until golden brown and tender.
  3. Make the slaw: In a medium bowl, combine cabbage, cilantro, lime juice, salt, and pepper. Toss to combine.
  4. Assemble the tacos: Warm tortillas according to package directions. Fill each tortilla with roasted cauliflower and top with cabbage slaw.
  5. Serve: Serve immediately and enjoy!
